雕花蜜饯又名“万花茶”,其中柚子果品耐贮藏,有“天然水果罐头”之称,以青柚雕成的蜜饯更是此中一绝。
Carved preserves are also known as "million flowers tea", among which grapefruit fruit is durable, known as "canned natural fruit", and preserves carved from green grapefruit are among the best.

Historical origin
雕花蜜饯的历史源远流长,可以追溯到东周时期。历经岁月的洗礼和传承,它在五代末年得到进一步发展,并世代相传,成为民间上贡朝廷的御品。其悠久的历史赋予了它深厚的文化底蕴,见证了不同时代的变迁和人们生活的点滴。
Carved candied fruit has a long history from the Eastern Zhou Dynasty. After years of baptism and inheritance, it was further developed at the end of the five Dynasties, passed down from generation to generation, and became the royal product of the folk tribute court. Its long history gives it a profound cultural heritage, witnessing the changes of different times and people's lives.
2009年3月,湖南省靖州雕花蜜饯技艺被列为第二批省级非物质文化遗产项目,雕花蜜饯既是一种独具特色的民族食品,又是美如玉琢、形色别致的工艺品,是美食文化与民族文化完美结合的民间艺术珍品。
In March 2009, Hunan Province Jingzhou carved preserves technology was listed as the second batch of provincial intangible cultural heritage projects, carved preserves are not only a unique ethnic food but also beautiful jade, unique handicrafts, is a perfect combination of food culture and national culture of folk art treasures.

·· 制作技艺 ··
Craft
首先,挑选大小适中、表皮光滑的未成熟柚子青果。
Select unripe grapefruit fruit with moderate size and smooth skin.
接着,用柳叶刀等工具将青果切成薄片,这一步需要精湛的刀工,确保切片均匀、薄厚适中。
Then, using a lancet and other tools, the fruit is sliced into thin slices, which requires exquisite knife work to ensure that the slices are evenly sliced and of moderate thickness.
然后,便是最为关键的雕刻环节。雕刻师们手持各种型号的柳叶尖刀,在薄薄的果片上施展绝技,雕出各种精美的图案。这些图案丰富多彩,有花鸟鱼虫、人物故事、山水风景等,每一个图案都栩栩如生,仿佛在诉说着一个故事。
Then is the most critical carving link. Carvers holding various models of willow blade pointed knives in thin pieces of fruit display skills, carved out various exquisite patterns. These patterns are rich and colourful; there are flowers, birds, fish and insects, character stories, landscapes, etc. Each pattern is lifelike as if telling a story.
雕刻完成后,将果片进行漂洗,去除苦涩味。随后,放入锅中煮沸,进一步去除杂质。接着,拌上优质白糖或蜂蜜,使果片充分吸收甜蜜的味道。
After the carving is completed, the fruit slices are rinsed to remove the bitter taste. Then, put it in a pot and boil to further remove impurities. Then, mix with high-quality white sugar or honey so that the fruit slices fully absorb the sweet taste.
最后,将果片晒干,经过这一系列复杂的工序,雕花蜜饯才算制作完成。
Finally, the fruit slices are dried, and after this series of complex processes, the carved preserves are completed.

Today, carved preserves have been included in the national intangible cultural heritage list and have received wide attention and protection.
