罗勒炒虾

Thai style basil shrimp stir fry

泰国菜里面我很喜欢的一道是泰式罗勒炒肉碎 pad krapow,咸香、热辣,浓烈烟火气搭配清新的罗勒,无论什么季节吃都很开胃!

This Thai basil shrimp dish is inspired by Pad Krapow, one of the most popular stir-fry dishes in Thailand. Succulent shrimps covered in a spicy, luscious sauce consisting of fish sauce and oyster sauce, each bite is filled with refreshing aroma of basil leaves. It's quick, easy to make, healthy and very scrumptious! 


1-2人份材料

Serves 1-2

鲜虾12只

大蒜 1-2瓣

小米辣 1颗

清酒/米酒 1茶匙

鱼露 1茶匙

蚝油 1茶匙

罗勒叶 一大把

12 shrimps

1-2 cloves garlic

1 Birds eye chili
1tsp sake/rice wine
1tsp fish sauce
1tsp oyster sauce
large handful basil




 步骤 instructions


  1. 鲜虾清洗,开背去虾线。
    Rinse clean the shrimps and make sure they are deveined.

  2. 不粘锅烧热适量油,加入蒜末和切碎小米辣,中火翻炒炒出香味,1-2分钟。
    Heat about 1/2 tbs oil in a pan, cook chopped garlic and chili until fragrant, 1-2 minutes.

  3. 加入鲜虾、料理酒、蚝油和鱼露翻炒5-8分钟,直到虾肉全熟(每家买的虾大小不一样,按个头调整时间)。
    Add the shrimps, sake, oyster sauce and fish sauce to the pan, stir-fry 5-8 minutes or until shrimps are fully cooked (time varies based on size of shrimps).

  4. 虾炒熟后加入罗勒叶翻炒至叶子收缩就可以关火出锅。
    Once shrimps are cooked, add basil leaves and stir fry until leaves are just wilted. Remove from heat and serve immediately.

虾完全没有提前腌制,简单炒炒就很入味。蒜香、辣味、咸香味和罗勒特有的味道交织在一起让简单的家常菜变得层次丰富。也可以加一点点糖来提鲜。
