地中海料理提鲜小秘方!

个头还不如小拇指大,这个常用于地中海料理的食材看起来平平无奇,甚至有些让人望而却步,可是一丢丢就可以让菜品的香气和口味获得升华!它的名字是油渍鳀鱼 (或凤尾鱼,anchovy)。


事实上不只是地中海,油渍鳀鱼在欧洲很多地方都是很常见的食材,比如做尼斯沙拉Salade Niçoise,或是搭配番茄做成开方式吐司……它也可以让朴实的蒜香黄油虾仁意面释放独特的“海味”,快手、健康又让人满足!

I finally understood the charm of anchovy. Recently I made a quick and simple shrimp pasta combining garlic butter and pieces of anchovy. The tiny anchovy enhanced the flavours and umami taste so much that it surprised me. If you like minimalist Mediterranean style pasta, I am sure you won't regret making this anchovy shrimp garlic pasta!


1人份材料

Serves 1

意面一人份

虾仁100-110克

油渍鳀鱼 1-3小条

自制蒜香黄油 10-15克

盐、胡椒粉适量

甜椒粉一撮

1 serving pasta

100-110g shrimps

1-3 anchovies

10-15g garlic butter

salt, pepper to taste

pinch of paprika

  1. 自制蒜香黄油做法戳这里,如果没有提前准备的就替换成1-2颗大蒜(切蒜末)+2茶匙欧芹碎+10g黄油+1茶匙橄榄油。Recipe for garlic butter is here. If you don't have premade garlic butter, replace with minced garlic (1-2 cloves), 2tsp chopped parsley, 10g butter, 1tsp olive oil.

  2. 油渍鳀鱼最好选材料只有橄榄油、鳀鱼、盐三种材料的,没有别的调味料和添加剂的以免味道过咸。I recommend using anchovies made with simply olive oil and salt.

步骤 Instructions

煮开一锅水煮意面,同时不粘锅烧热少许油,加入1-2根切碎的油渍鳀鱼,中火翻炒1-2分钟,然后加入清理好的虾仁翻炒
Bring a pot of water to a boil and cook pasta according to package instructions. Meanwhile heat 1/2 tsb oil in a pan, add chopped anchovies (1-2 pieces), sauté over medium heat for 1-2 minutes. Then add peeled, deveined shrimps, continue cooking 

虾仁半熟状态时候加入蒜香黄油,继续翻炒五分钟左右,或至虾仁全熟

Toss in garlic butter when shrimps are half cooked, continue cooking for 5 minutes or until shrimps are fully cooked 

这时候意面应该也煮好了,把它捞出加入到平底锅中和虾仁混均匀。尝尝味道,太淡可以增加鳀鱼(切碎)或者海盐,口味满意了关火,撒点甜椒粉拌匀出锅。出锅之前可以额外加一些蒜香黄油提升香气和光泽感。
Pasta should be fully cooked by now. Mix shrimps with pasta, and taste. If it's under-flavored, you can add one more piece of anchovy (chopped), or salt. Remove from heat once you are happy about the taste. Garnish pasta with paprika.

油渍鳀鱼的独特咸味和鲜味搭配蒜香虾仁意面特别合适,每一口都会让人联想到地中海的海边,香味浓郁又不会觉得过腻。因为油渍鳀鱼本身有咸味所以一定要在加入意面之后再决定要不要额外加盐!一丢丢的甜椒粉会让意面风味更多层次和高级。有的时候小小改变就可以给菜带来很大不同!

题外话:今年八月离开生活了12年的加拿大,来到法国攻读MBA。谁能想到MBA比之前工作卷那么多!开学才两周就结束了一门课,同时还要去外地团建和做社工。这十几天过得和特种兵一样,收获和学习的确很多,但几乎没时间好好做饭!
