前段时间特别忙,做菜就会想偷懒——调料越少越好,操作越简单越好。今天分享的几个菜谱基本可以总结成两步:食材和调味料混合均匀腌制→进烤箱烤。有的时候你会惊讶食物美味程度原来不一定和付出的劳动成正比,闭着眼都能做的菜也可以让人快乐又满足!而且,它们还很健康哦!

焗咖喱鸡&韩式辣鸡
baked curry chicken & Spicy Korean chicken
泰式绿咖喱酱中包含的绿辣椒、蒜、南姜、香茅、泰国青柠叶等材料赋予它饱含辛香气同时又非常清爽的特质,和椰浆的醇厚、鱼露的独特咸鲜相得益彰。韩式风味烤鸡中加入的蜂蜜可以让辣椒酱释放出更迷人的味道,同时中和部分辣,够味、满足!
鸡胸肉/鸡腿肉 120-150g
- 泰式绿咖喱酱 1汤匙
鱼露 2茶匙
椰浆 10g
淀粉 1茶匙
韩式辣鸡:
-韩国辣椒酱 10g
酱油 2茶匙
蜂蜜 2茶匙
淀粉 1茶匙
120-150g chicken breast/thigh
-1 tbs green curry paste
2 tsp fish sauce
10g coconut cream
1 tsp starch
Korean style:
- 10g Guchujang
2 tsp soy sauce
2 tsp honey
1 tsp starch
鸡肉嫩度带皮鸡腿>鸡腿>鸡胸肉,健康程度相反
淀粉可以让肉质保持嫩和多汁。玉米淀粉、木薯粉都可以
Tenderness: skin on chicken thigh >skinless chicken thigh > chicken breast. Healthy level is the opposite (of course).

所有材料混合拌匀,腌制1小时以上或冷藏过夜。
烤箱或空气炸锅:180摄氏度,20分钟或至全熟,期间翻次面。
Combine and mix all the ingredients. Marinate chicken for 1 hour min, or refrigerate overnight.
To cook: Bake at 180 ℃ for 20 min, until fully cooked. A convection oven or an air-fryer will work, flip it half-way.

照烧三文鱼&味噌三文鱼
baked teriyaki salmon & miso honey salmon
三文鱼 150g
- 酱油 2茶匙
蜂蜜 2茶匙
味淋 2茶匙
淀粉 1茶匙
味噌三文鱼:
-白味噌 10g
酱油 1茶匙
蜂蜜 2茶匙
150g salmon
- 2tsp soy sauce
2tsp honey
2tsp mirin
1tsp starch
Miso salmon:
- 10g white miso paste
1tsp soy sauce
2tsp honey
做法同上!
上面四种组合其实都是很常见经典的搭配,比如做带汤汁的咖喱鸡、韩式辣鸡锅,只不过把做法简化到不动手不开火,只用烤箱烤。在我看来是很实用的工作日/上学日简餐选择,搭配点蔬菜和碳水就很丰富营养啦!
p.s. 因为带有酱汁,烤的时候需要多留意一下,必要的话盖锡纸,防止烤焦。烤鸡出炉之后可以放五分钟,这可以帮助锁住肉里的汁水。
