醇香红酒酱配牛排

尝试用意想不到的材料组合做出的红酒酱汁,没想到能如此让人上瘾,以至于我在一周内吃了三次煎牛排配红酒酱……醇厚、浓郁,充满红酒和黑胡椒香气,略微的甜味让鲜味也更上一个层次,只用盐调味的牛排都让人惊艳!
这款中西结合的牛排酱汁主要只需要三种调料:红酒、蚝油以及(我突发奇想加入的)波特酒。去年夏天去葡萄牙接触到了波特酒(Port wine)。因为我本身不喜欢红酒的丹宁酸涩感,天然甜味重、果味浓郁、酒体醇厚的波特酒反而更讨我喜欢。
波特酒更高的酒精度数和糖分可以让红酒酱汁更加香醇浓郁,和牛肉本身的肉汁和香气糅杂在一起,味道非常高级!推荐尝试~
I randomly put several ingredients together to make this red wine based steak sauce, and it turned out surprisingly delicious! The key ingredients of this Chinese influenced steak sauce are red wine, oyster sauce, and Port wine. The natural sweetness of Port wine elevates other flavours, making the sauce more unique and luscious. The red wine sauce makes the steak taste so fabulous, even though it's only seasoned with salt. Can you imagine I've had steak three times in a week because of the sauce?

Ingredients (serves 2)
红酒 60ml
波特酒 1-2茶匙
蚝油 10g
黑胡椒
60ml red wine
1-2 tsp Port wine
10g oyster sauce
black pepper

对于“如何煎好牛排”这件事众说纷纭,多尝试才能找到符合自己喜好的做法,菜谱当个参考就好。从冰箱取出你喜欢的牛排,用厨房纸擦掉表面血水,撒少量盐,室温静置半小时。热锅、热油,下牛排,大火每面煎2-3分钟(约2厘米厚度,半熟程度)。时间根据你的喜好调整。
Everyone has a different definition of "a good steak", recipes are only references. Let steak stand in room temperature for 30 min. Pat dry with paper towel, lightly season with salt. Heat the pan, then heat the oil until sizzling. Cook steak 2-3 mins per side (2-cm steak, medium), adjust time according to your preferred doneness.

Once flip the steak, I'd like to add a small cube of butter and garlic to add more flavours. Once the steak is cooked, remove from pan, let stand for 5-10 mins, to lock the juice inside the steak.
牛排取出后锅子不用洗,油脂吸收了牛排和蒜香。煎牛排的蒜粒可以不取出,直接加入红酒酱汁的所有材料,开小火,变煮边搅拌。多加现磨黑胡椒可以增加香气,酱汁水分蒸发一半,变得晶莹、略浓稠就可以关火。想要达成更有光泽度的酱汁可以加入小块黄油,搅拌至完全和酱汁混合。
No need to clean the pan, directly pour in red wine, port wine, add oyster sauce. Cook over low heat, stirring often. I recommend adding lots of ground pepper. Turn off heat once sauce is reduced and thickened. Melt a small cube of butter in the sauce if you want more shinny, smoother texture.
