Located in the colonial city of Izamal, Kanché pays 

homage to the distinctive flavours of Mexico. Island.


当你走在伊萨马尔的街道上,会感受到这座殖民城市的独特魅力,它是十六世纪玛雅古城的重要遗迹,坐落于墨西哥尤卡坦州北部,曾在玛雅时期被当地人民称为“Itzamná”,玛雅语中意为“天上飘落的露水”。

As you walk through the streets of Izamal, you will feel the unique charm of this colonial city, an important remnant of the sixteenth-century Mayan city located in the northern part of the Mexican state of Yucatán, which was once known by the local people during the Mayan period as “Itzamná,” which means “dew falling from the sky” in Mayan. It was once called “Itzamná” by the local people during the Mayan period, meaning “dew from the sky” in Mayan.

Located next to the Kinich Kakmó pyramid in Izamal, Yucatán, the restaurant Kanché features locally grown ingredients and fruit wines. In order to respect the existing vegetation in the local orchards and to minimize its impact on the environment, the Kanché restaurant grows vegetables, fruits and herbs in a kind of elevated building known as a Ka'anchul, integrating the building with its surroundings and respecting the historical and traditional architectural lineage.



Kanché餐厅邀请了墨西哥建筑事务所Vagantes的创始人Gina Góngora为他们设计了该项目。Vagantes以“慢生活”的理念为设计切入,为不同客户创建了多个精品项目和令人难忘的空间感知体验。

Kanché invited Gina Góngora, founder of the Mexican architectural firm Vagantes, to design the project for them, and Vagantes took the idea of “slow living” as a starting point to create a number of boutique projects and unforgettable spatial perceptual experiences for different clients.

Being in this small city, the pyramids, temples and colonial buildings in front of you are awe-inspiring. Many of the houses here are painted a bright yellow color to express the worship of the Mayan culture's sun god.

Kanché餐厅占地500平米,建筑的地理位置由主理人精心选定,既尊重当地的植被生长,又有着最佳的气候环境,良好的通风条件、日照充足,同时又能欣赏到金字塔的优美景观。。
Kanché restaurant covers an area of 500 square meters, and the building's location was carefully chosen by the directors to respect the local vegetation growth, but also to have an optimal climate, with good ventilation, plenty of sunlight, and at the same time a beautiful view of the pyramids..

Kanché餐厅分为三部分:一是吧台区,穿过树木之间的部分地形,为用餐者创造了一个主要空间,该区域受到树冠的遮蔽,同时也成为花园的观景台;服务区,包括厨房、储藏室和供用餐者使用的卫生间;果园,利用现有植被在吧台周围创造不同的环境,消隐室内外的界限。
Kanché is divided into three sections: the bar area, which cuts through a portion of the terrain between the trees to create a primary space for the diner, which is shaded by the canopy of the trees and also serves as a viewpoint of the garden; the service area, which includes the kitchen, pantry, and restrooms for the diner; and the orchard, which utilizes the existing vegetation to create different environments around the bar, blurring the boundaries between the indoors and the outdoors.

Zapote Wood

空间优先考虑了使用当地的可持续材料,例如用一种名为“扎波特木”(Zapote Wood)的植物用来当作保护吧台的顶棚,用尤卡坦州南部石灰和泥土来粉刷墙壁和地面。此外,还使用了砾石和铺路石,最大限度地提高地面的透水性,减少对场地的影响。
The space prioritizes the use of local, sustainable materials, such as Zapote Wood, a plant used to protect the roof of the bar, and Southern Yucatan lime and clay for the walls and floors. Gravel and pavers were also used to maximize the permeability of the floor and minimize the impact on the site.

在家具选择上,餐厅利用了回收而来的旧城电影院的椅子、传统的玉米饼制作桌和手工制作的吧台凳。此外,空间之中还融入了瓶罐、器皿和当地工匠的手工作品。
In terms of furniture, chairs from an old city cinema were recycled, traditional tortilla-making tables were reused, and bar stools were handmade. Additionally, bottles, utensils, and pieces from local artisans were integrated into the decoration and ambiance.

Kanché features fruit wines for meals, inspired by bartender Gabriel Rodríguez's time spent in orchards and near the mysterious pyramids. As a result, he has expanded his library of flavors, aromas and even “colors” in the fascinating world of spirits, and we can follow him as he explores the hidden art in every cocktail!
