Apple Cinnamon Muffins


这款无油无糖纯素果莓杯子蛋糕超级美味、口感也很松软。

最棒的是:它们也非常健康,因为它们是100%纯素食、无油、无糖。

可以把它们作为早餐、小吃或健康甜点!


These fruit muffins are super delicious, fluffy and moist. 

The best is they are also very healthy since they are 100% vegan, oil-free and sugar-free. 

Once baked, enjoy these healthy vegan muffins for breakfast, a snack, or dessert!



-食材-

INGREDIENTS


60克 全麦面粉

60g whole wheat flour

5克 红薯淀粉

5g sweet potato starch

15克 小麦胚芽粉

15g wheat germ meal

1茶匙 泡打粉

1tsp baking powder

1/2茶匙 小苏打粉

1tsp soda powder

一小撮肉桂

A pinch of cinnamon

60克 纯素酸奶,如双色豆酸奶

60g plant-based yogurt, such as bicolour soy yogurt

3克 苹果醋(无酒精)

3g apple vinegar

70克 苹果

70g apple

一把 葡萄干

A handful of raisins


装饰

For the topping:


纯素酸奶

Some vegan yogurt


可选:

Optional: 


也可以加入碎核桃或纯素巧克力。

也可以用纯素花生酱代替一半的纯素酸奶。


You can also add in crushed walnuts or vegan chocolate.

Also you can replace half of the vegan yogurt with vegan peanut butter.



-做法-

INSTRUCTIONS


将烤箱预热至175摄氏度。


First, preheat the oven to 175C. 



在一个大碗,将全麦面粉、小麦胚芽粉、泡打粉、盐和肉桂粉混合,搅拌均匀。


In a large bowl, combine whole wheat flour, wheat germ meal, baking powder, salt and cinnamon and whisk.




将苹果、纯素酸奶、双色豆浆粉和醋加入搅拌机中,搅拌至光滑。


Add the apple, vegan yogurt, bicolour soymilk powder and vinegar to a blender and blend until smooth.



加入到干粉类,翻拌均匀成糊状。搅拌均匀后再加入葡萄干,搅拌均匀。


Then slowly add the wet mixture to the dry mixture, mixing in-between. Scrape down the sides of the bowl as you go and try not to overmix the batter. When ready, the batter should still be thick. Then add in the raisins and mix until combined.



倒入杯子模具。

烤箱175℃烤20-30分钟(时间取决于用的烤箱)或至表面金黄即可)。


Transfer the muffin batter to a lined and/or greased cupcake tin and bake for 17-20 minutes, or until the muffins are lightly browned and cooked through. To test, use a toothpick to insert into the center of a cupcake. When ready, it should come out dry. 



出炉,放凉,放凉后取掉模具,装上纯素酸奶即可。


Then, remove the muffins from the oven and allow them to cool for 10-15 minutes before removing them from the cupcake tin.

Top with vegan yogurt
