特刊简介:
食品是一种复杂的物质,它既含有营养物质,又含有功能性/生物活性化合物,如黄酮、色素、多酚、多糖、低聚糖、抗氧化剂、酶等。此外,食物在消化过程中会产生更多的生物活性化合物。最典型的生物活性胃肠道产物之一是生物活性肽。所有这些功能性/生物活性化合物在人类健康甚至某些疾病中发挥着关键作用。
因此,高效发现这些功能/生物活性化合物,特别是高通量的发现或筛选,变得非常重要。信息科学技术和组学(基因组学、蛋白质组学、代谢组学、风味组学等)、高通量技术、虚拟/计算预测技术的迅速发展,促进了食品中功能/生物活性化合物的高效发现和创新。本期特刊将重点介绍筛选、预测和设计食品中功能性和/或生物活性化合物的新技术,包括高通量方法、虚拟/计算策略,信息学手段、体外、或体内的生物活性测定,及分子机制的阐明等新技术。
