2024年9月20日,中国农业科学院油料作物研究所油料品质化学与加工利用创新团队在食品领域TOP期刊《Journal of Food Composition and Analysis》(IF:4)上发表了题为“Comprehensive lipid profile analysis of three fish roe by untargeted lipidomics using ultraperformance liquid chromatography coupled with quadrupole time-of-flight tandem mass spectrometry”的研究性论文。王杰和俞喜娜为本文的共同第一作者,魏芳研究员为本文通讯作者。

结论
本研究利用无靶向脂质组学技术,对三种鱼籽中的脂质分子物种进行了深入的分析。共鉴定出449种脂质物种,涵盖了13个亚类。研究结果揭示了不同鱼籽在SLs、PLs和GLs方面的显著差异,为海洋鱼籽的营养价值提供了新的见解,并为海洋鱼副产品的加工提供了理论基础。
