相传麻婆豆腐出现于晚清同治年间,作为四川地区传统名菜之一,这道菜将川菜的特点表现到了极致。

Mapo Tofu is said to have emerged during the reign of Emperor Tongzhi in the late Qing Dynasty and is one of Sichuan’s famous traditional dishes, showcasing the bold flavors of Sichuan cuisine.

With the spread of Sichuan cuisine, at present, Mapo Tofu has traveled across the oceans and found its way to the US, Canada, the UK, France, Vietnam, Singapore, Malaysia, Japan, Australia, etc.

麻婆豆腐能受到如此广泛的追捧,除了它独特的味道本身,还因它还是一道“有发挥空间的菜”。今天,桂叔将在遵循传统技艺、沿袭经典味道的基础上,给麻婆豆腐增加一口飘飘然的“鲜”气!

桂叔,1975年出生于重庆开州的餐饮世家,任职平面设计师超过20年,同时拥有超过15年餐饮行业经验,2014年在成都正式开设一间私人定制私房菜餐厅,2017年于西安开设一间私房菜餐厅,2019年于成都开设一间海鲜主题私房菜。

“我曾找了很久和豆腐口感相近、又能和它绝妙地搭配上的食材。”桂叔说,在不破坏麻婆豆腐的传统魅力之上,这一份鲜味经历了漫长的寻找和尝试。例如,桂叔曾尝试过选用乌鱼或其他海鱼配豆腐,但总有盖不住的腥味;也曾尝试过民间常用的牛脊髓和脑花搭配,除了高胆固醇很“劝退”追求健康饮食的桂叔以外,难以避免的腥味和极其复杂的食材处理过程,也不适合家庭厨房。

“I had long been searching for a fantastic ingredient to complement tofu with a similar mouthfeel,” Uncle Gui noted. After extensive searching and experimenting, he achieved a taste of freshness that doesn’t impair the traditional charm of Mapo Tofu. A case in point, Uncle Gui once used northern snakeheaded and other sea fish as tofu’s accompaniments, but both had a strong fishy smell that was hard to mask. On another occasion, he experimented with beef spinal cord and brains, which are common in folk cuisine. However, this attempt failed, for their high cholesterol content drove Uncle Gui, who pursues a healthy diet, to abandon the idea. Besides, these ingredients are not suitable for a home kitchen because of their inevitable odor and extremely intricate preparation processes.

最终,经过层层筛选,和豆腐口感近似并健康的的生蚝,进入了桂叔的视野。

Eventually, through rounds of selection, Uncle Gui notices oysters, which have Tofu-like mouthfeel and are healthy.
