在吴侬软语的浸润里

他们的团年饭

不但做起来耗时间

吃起来也要慢嚼细品

青砖伴瓦漆

that tinges the scarf with red.
——这就是“吴侬软语”,也就是苏州话。被称作“中国最优雅的方言”。

This is “wu nong ruan yu”, or the Suzhou dialect. It’s known as the most graceful dialect in China. 

中国人常说,苏州人用“吴侬软语”吵架也像唱歌,旁人听着也是一种享受。和苏州人一样典雅、精致的,还有一道淮扬名菜——红烧狮子头。
People often say that when Suzhou locals argue in their dialect, it sounds like singing, which is enjoyable for those listening. Just like the elegance of the Suzhou people, there’s a well-known dish in Huaiyang Cuisine: stewed pork balls in brown sauce.


红烧狮子头的原料要选用上好的猪前腿肉或肋条肉,肥瘦相间,剁切成石榴状的肉粒,太细或者太粗都不行,这样才能让肉粒间保持缝隙,才能含汁。
To make stewed pork balls in brown sauce, the best cuts of pork from the front leg or ribs are chosen, ensuring a good mix of fat and lean meat. The pork is chopped into pomegranate seeds-sized. It’s important that the pieces are not too small or too large, so that they can retain the juices. 
往肉里加入荸荠和莲藕这两种生长在江南水乡的特产,再拌入秘制的调料,搅拌均匀后揉搓成约150克的肉丸。
Then, water chestnuts and lotus roots, which are specialties from southern water towns, are added along with a special mix of spices. Everything is blended together and then shaped into meatballs that weigh about 150 grams each. 

一头猪身上最好的肉只能做4至6只丸子。然后经过慢煎和长达4个小时的慢炖,这道菜才能完成。

Using the best cuts, only 4 to 6 meatballs can be made from one pig. Finally, the meatballs are slowly fried and then stewed for 4 hours to complete the dish.

红烧狮子头肉感满满、汁香浓稠,像绵绵的“吴侬软语”一样,入口即化。

Stewed pork balls in brown sauce are tender and juicy, melting in your mouth like the gentle “wu nong ruan yu”. 


吃红烧狮子头可不能大快朵颐,要像苏州的慢生活一样慢嚼细品,因为肉馅里马蹄的清脆和莲藕的芬芳,可以通过味蕾,把人们从餐桌带入大自然,寻踪早春。

Don’t rush while eating this dish. Instead, take your time to enjoy it, just like the relaxed way of life in Suzhou. As you taste, the crunch of water chestnuts and the aroma of lotus roots in the meatballs can transport you from the table to nature, reminding you of early spring.

红烧狮子头,一般会在盘中盛放四只,分别寓意福、禄、寿、喜,也就是人生中的福运、官禄、长寿、吉祥。
Stewed pork balls in brown sauce are typically served with four meatballs on a plate, each representing “fu”, “lu”, “shou” and “xi”, or fortune, prosperity, longevity, and joy in life. 

再加上圆圆的丸子象征了“团团圆圆”,也就是一家人全部团聚在一起的意思——这是对家庭最美好的祝福。所以红烧狮子头,成为江苏人春节年饭的压轴菜。每一口,都是“团团圆圆”的幸福,都是来自福、禄、寿、喜这四种“喜”的美好祝愿。
The round shape of the meatballs also stands for “tuan tuan yuan yuan”, symbolizing the gathering of all family members. It’s the best wish for a family. Therefore, this dish has become the highlight of the reunion dinner in Jiangsu. Each bite reflects the joy of “tuan tuan yuan yuan” and the best wishes tied to the four blessings of “fu”, “lu”, “shou” and “xi”.
