它却因为独特的气质
“闻”名中外

越吃越上头


在长江中下游的安徽,有一道闻起来特别臭的菜,如果您因此望而却步,那将很遗憾地错过一道舌尖上的美味——安徽臭鳜鱼。

Anhui is situated along the middle and lower reaches of the Yangtze River. Here, you can enjoy a smelly but surely delicious dish. If you avoid it because of the smell, You will probably miss such wonderful experience on taste buds just afraid of its smell---Anhui smelly mandarin fish.


汉字“安徽”的“徽”,包含了“山、水、人、文”。黄山、琅琊山闻名天下,长江、淮河、新安江将安徽一分为三,“七分山两分水一分田”的安徽,在古代成为了文人墨客的向往之地,孕育了灵秀的徽派人文,吃得苦、讲道义、重诚信的徽商,便出自此。

The Chinese character “Hui” in “Anhui” represents “mountain, water, people, and culture”. Huangshan Mountain and Langya Mountain are famous around the world, while the Yangtze River, Huai River, and Xin’an River split Anhui into three sections. Anhui, where 70% of its territory are mountains, 20% water, and 10% farmland,  was popular among ancient scholars, fostering the refined Huizhou culture.The Hui merchants, known for their endurance, integrity, and honesty, originated from this region.


臭鳜鱼便出自徽商的故乡之一——徽州,是中国八大菜系之一徽菜的当之无愧的代表。鳜鱼,是长江流域著名的河鲜,肉质紧实。尤其清明前后,桃花盛开时,是江南的春汛,也是鳜鱼最肥美的季节,这段时间的鳜鱼被称作“桃花鳜”。

Stinky mandarin fish comes from Huizhou, Huizhou, hometowns of Hui merchants, is also the birthplace of smelly mandarin fish which is a hallmark dish of Anhui cuisine, one of China’s eight major cuisines.

Mandarin fish, the well-known creature in the Yangtze River, features tight firm flesh. Around the Qingming Festival, during which peach flowers in bloom and coincides with the spring flooding season in Southern China, mandarin fish are the best in whole year. Thus, fish caught during this period are called “peach blossom mandarin fish”.


臭鳜鱼的“臭”,其实是中国一种古老而特殊的腌制方法。古时的徽州交通不便,徽商们为了将新鲜的鳜鱼运往远处市场,不得不在鱼身上撒上一层盐并经常翻动,以延长保质期。盐和鳜鱼的身体发生反应,会散发出一种奇特的味道。

The dish's special smell can be dated back to a traditional Chinese way of preserving food.Due to ancient inefficient transportation, Hui merchants usually sprinkled salt on fish and turned them over often on their way to faraway markets to retain freshness. Salt-fish reaction creates the distinct smell.


臭鳜鱼闻着“臭”,吃着却“香”,低调内敛却韵味悠长。在汉语中,它的名字“鳜”与含义富贵的“贵”同音,所以也寓意着“富贵有余”,也就是生活富足、地位尊贵,且拥有盈余和满足的意思。

The smelly but delicious dish offers a subtle yet rich flavor. In Chinese, the fish is called “gui yu”, with the first part “gui” sounding like the character for “affluent life and noble social status", meaning abundance and satisfaction.

这个吉语让臭鳜鱼成为安徽人年饭桌的经典菜。除了美味,还寄托着每一位在外打拼的徽商,对故乡的思念。

This auspicious phrase turned smelly mandarin fish a traditional dish for the reunion dinner during the Spring Festival in Anhui.Thanks to its good taste, the time-honored dish, can also trigger off Hui merchants' nostalgia of their homeland.
