也是春节假期的最后一天

前面十几期的丰盛美食

已让人大快朵颐

今天

来一碗上海的蟹黄面

鲜而不腻

爽滑可口

万里长江,出青藏高原,穿高山峡谷,过江汉平原,经江南水乡,最终从上海归入大海。通江达海,正是上海这座城市的气度,也逐渐形成了海纳百川、兼容并蓄的海派文化。

The Yangtze River begins in the Qinghai-Xizang Plateau, cuts through mountains and valleys, flows across the Jianghan Plain, and winds its way through the southern water towns before finally reaching the sea at Shanghai. This connection between rivers and the ocean reflects the spirit of Shanghai and has fostered a unique culture that is welcoming and eclectic. 

上海美食,就汲取了各地食文化的精粹,高雅而又前卫——比如,始于苏州、成于上海的蟹黄面。

Shanghai cuisine draws inspiration from food traditions all over the world, resulting in refined and innovative dishes. A great example is the crab roe noodles, which started in Suzhou but were perfected in Shanghai.

制作蟹黄面,首先要把精挑细选出来的螃蟹蒸熟,然后开始拆蟹,小心翼翼地把蟹黄、蟹膏和蟹肉一点点分别取出。为了提取螃蟹的精华,这个环节要倾注极大的专注与耐心。随后,便是榨蟹油、熬蟹酱。一碗蟹黄面,至少需要六只肥蟹。
To make crab roe noodles, start by steaming carefully chosen crabs. Next, take apart the crabs to extract the crab roe, crab cream, and crab meat piece by piece. This process takes a lot of focus and patience to really capture the flavor of the crabs.Then, extract crab oil and simmer crab sauce. To prepare a bowl of crab roe noodles, you need at least six plump crabs. 

上海蟹黄面借用陕西人的智慧,往面条里加入了菠菜汁。这不仅让面条看起来更加清爽,更有益于健康。把蟹黄酱淋在菠菜面上,再拌均匀,每根面条都浸染上蟹粉的鲜香气,带来视觉和味蕾的双重享受。

The noodles are inspired by Shaanxi cuisine, using spinach juice to give them a vibrant color ,making them healthier. Pour the crab roe sauce over the spinach noodles and mix them well, so each noodle can soak up crab flavor, offering a treat for both the eyes and the taste buds.

春节团圆,刚端上年饭桌的蟹黄面宛如一件艺术品。蟹黄酱铺着厚厚的一层,色泽好似黄金,寓意着新一年“黄金万两”,也就是财运亨通的意思。根根面条劲道十足,又象征着长久与长寿。这些都是中国春节的美好祝福。

During the Spring Festival, crab roe noodles look like a piece of art when they are freshly served at the table. The rich, golden crab roe sauce symbolizes the wish for “huang jin wan liang”, or plenty of wealth in the new year. The sturdy noodles also represent enduring relationships and longevity. These are the best wishes for the Spring Festival.
