Advances in Sustainable Processing and Utilization of Plant Lipids and Proteins
Issue Introduction
As the
global challenges in food safety and sustainability accelerate, the demand for
plant-derived proteins and lipids as nutrient-rich ingredients is increasing. Due to the dual benefits of nutritional enhancement and diminishment in environmental threats, the increasing consumer preference for natural foods shed lights on the development of plant-based ingredients.
This special issue is
dedicated to original research contributions focused on the processing and
utilization of plant proteins and lipids with sustainable methods and novel
techniques, helping to reduce resource consumption, minimize waste, mitigate
the environmental impacts and improve the quality and values of plant-based
foods.
Proposed Topics
Hence, this special issue will include contributions on topics including but not limited to the following:
1.Extraction and Functional Characterization:
Explore methods for extracting and functionally characterizing alternative plant proteins and lipids.
2.Structural Elucidation of Plant Proteins:
Investigate structural aspects of plant proteins and their implications for both nutritional science and food engineering.
3.Impact of Processing on Physicochemical Properties:
Examine the influence of processing techniques on the physicochemical properties of lipids and proteins.
4.Structure-Activity Relationship and Molecular Mechanism:
Explore the intricate relationship between molecular structure, activity, and the specific molecular mechanisms involved.
5.Sustainable Processing Technologies:
Sustainable processing technologies aim to enhance the bioavailability of proteins and lipids derived from oil crops.
6.Reuse of By-products:
Assess opportunities for the efficient reuse of by-products from plant proteins and lipids processing.
Guest Editors
Prof. Xiaonan Sui
Doctoral supervisor of the College of Food Science of Northeast Agricultural University, winner of the National Distinguished Youth Science Fund and the National Excellent Youth Science Fund, and vice president of Heilongjiang Green Food Science Research Institute. He serves as Deputy editor of Sustainable Food Proteins, academic editorial board member of Journal of Food Biochemistry, and editorial board member of Future Food Science.
He is mainly engaged in soybean protein research, focusing on key scientific issues such as molecular structure analysis of soybean globulin, characterization of structure-activity relationship and regulatory mechanism, revealing basic scientific laws of allosteric, assembly and rearrangement of protein molecules in food processing, and realizing green processing and high-value utilization of soybean protein.
Prof. Mingming Zheng
Doctoral supervisor from Oil Crops Research Institute, CAAS, chief scientist of oil chemistry and processing quality team, consultant of the American oil chemists association. He was selected as the national scientific and technological innovation leading talent, young top talent and outstanding young agricultural scientist. He serves as academic editorial board member of Food Safety and Health and editorial board member of Oil Crop Science.
His study focus on bio-refining of edible oil, enzymatic synthesis of functional lipids and ingredients, structure-activity relationship and functional products creation,making great contributions to construction of high active enzyme catalyst and reaction system, functional lipid biosynthesis and oil quality improvement.

Papers submitted to the UPLP special issue will be undergoing expedited peer-reviews and published open access with free of Article Processing Charge (APC).
The deadline for submission is September 30, 2024 and the whole issue is expected to be published before December 15, 2024.
