Special Issue 2024.04

Advances in Sustainable Processing and Utilization of Plant Lipids and Proteins

Issue Introduction

As the global challenges in food safety and sustainability accelerate, the demand for plant-derived proteins and lipids as nutrient-rich ingredients is increasing. Due to the dual benefits of nutritional enhancement and diminishment in environmental threats, the increasing consumer preference for natural foods shed lights on the development of plant-based ingredients.

This special issue is dedicated to original research contributions focused on the processing and utilization of plant proteins and lipids with sustainable methods and novel techniques, helping to reduce resource consumption, minimize waste, mitigate the environmental impacts and improve the quality and values of plant-based foods.

Proposed Topics

Hence, this special issue will include contributions on topics including but not limited to the following:

1.Extraction and Functional Characterization:

Explore methods for extracting and functionally characterizing alternative plant proteins and lipids.

2.Structural Elucidation of Plant Proteins:

Investigate structural aspects of plant proteins and their implications for both nutritional science and food engineering.

3.Impact of Processing on Physicochemical Properties:

Examine the influence of processing techniques on the physicochemical properties of lipids and proteins.

4.Structure-Activity Relationship and Molecular Mechanism:

Explore the intricate relationship between molecular structure, activity, and the specific molecular mechanisms involved.

5.Sustainable Processing Technologies:

Sustainable processing technologies aim to enhance the bioavailability of proteins and lipids derived from oil crops.

6.Reuse of By-products:

Assess opportunities for the efficient reuse of by-products from plant proteins and lipids processing.

Guest Editors
