Novel health impacts of food hydrocolloids
This Special Issue will focus on how carbohydrate and protein hydrocolloids within foods can affect parameters of physical or mental health.

Special issue information:
Hydrocolloids are habitually used in foods to improve their sensory acceptability or shelf-life. The unique properties and structures of hydrocolloid molecules may also have impacts on multiple aspects of human health, either as a result of their direct interaction with the human body and digestive processes, an impact on microbial communities, or simply through making foods (as a matrix for nutrient delivery) easier or more appealing to consume.This Special Issue will align with the overall scope of Food Hydrocolloids for Health but will particularly seek original articles and reviews on (i) emerging approaches to model the impacts of hydrocolloids on health (ii) novel mechanisms for health effects of hydrocolloids, (iii) novel targets/outcomes for health impacts of hydrocolloids or (iv) bioactivity of novel hydrocolloid fractions. Submissions must focus on work based on food or beverage matrices to fall within remit. All methodological approaches are considered acceptable as long as they (i) clearly link to health and (ii) align with the wider Elsevier policies relating to studies with animals or human participants.
