Structure-function relationships of plant-based proteins
To unravel the intricate structure-function relationships of biomacromolecule proteins, advanced instrumental techniques, computational simulations, and AI-driven modeling and predictions are being employed. Research efforts are also focused on exploring various approaches to modify and enhance protein functionality, broadening their application spectrum. Additionally, many studies aim to elucidate the complex interplay between protein chemistry and structure, their functional properties, the impacts of food processing, and the performance in end-use products. A more in-depth understanding of protein structure-function relationships will provide rational guidance and expedite the development and utilization of alternative protein ingredients. This special issue welcomes the submission of high-quality articles that offer novel insights and a deeper understanding of the structure-function relationships of plant-based proteins.
