While I was sitting at the dinner table with my dad, I asked him: What is your favorite vegetable? He immediately told me that it has always been tomatoes.
Though technically a fruit, it seems that the love for tomatoes runs in my family because, just like him, I am also a big fan of tomatoes as well. You won’t believe how many times my dad cooked tomatoes for me when I was a kid.
Now that winter is here, my dad's go-to dish is one of the simplest dishes is perhaps one of the tastiest of all time. And best of all, it's healthy!

Method:
Step 1. Chop the tomatoes into small slices and set them aside.
Step 2. Crack the eggs into a small bowl. Season with half a teaspoon of salt and beat until combined.
Step 3. Add the oil and garlic to a pan over high heat and let simmer. Then turn the heat to medium-low. This step is important as you don't want to overcook the eggs! Pour in the eggs and stir them gently with a spatula until no liquid remains. Transfer them to a bowl.
Step 4. Add some more oil to the pan and then add the chopped tomatoes. Add the remaining salt, sugar, ketchup, and soy sauce.
Step 5. Add the eggs back into the pan and stir them around with the tomatoes until everything is nicely combined. Then, turn off the heat.
Step 6. Give it a taste and adjust the seasoning to your liking. Depending on your taste, you might want to add more sugar or salt.
All done! What recipes do you make that are inspired by your parents?
