Zhangye, anciently known as Ganzhou, is located in the northwest of Gansu Province, serving as a dazzling pearl on the Hexi Corridor. This place boasts not only the magnificent Seven-Colored Danxia and the mysterious Mati Temple, but also accumulates a rich historical culture. It is a significant node on the Silk Road and is renowned as the “Southern Frontier” and “Golden Zhangye”.

搓鱼子,是张掖独有的汉族面食小吃。其形状中间粗、两头尖,犹如小鱼,因而得名。制作工艺稍显复杂,需将面团擀成薄片,切条后分段搓成小鱼状,再下锅煮熟。这道小吃口感独特,深受当地人喜爱。


Fish-like noodles, a unique Han Chinese pasta of Zhangye, derives its name from the shape—thick in the middle and pointed at both ends, resembling a little fish. Its craftsmanship is slightly complicated, requiring the dough to be rolled into a thin sheet, cut into strips, and then twisted into fish-like shapes before being boiled in water. With a unique taste, this snack is deeply loved by locals.

搓鱼子的历史可追溯到明清时期,当时张掖作为商贸重镇,各地商人云集。搓鱼子因其独特的口感和制作工艺,逐渐在当地流传开来,成为张掖饮食文化的一部分。


The history of Fish-like noodles can be traced back to the Ming and Qing dynasties, when Zhangye served as an important commercial town and a gathering place for merchants from various regions. Due to its unique taste and craftsmanship, Fish-like noodles gradually spread locally, becoming an integral part of Zhangye’s food culture.

 【故事传说】 


相传,搓鱼子起源于一位巧手的张掖妇女。她为了让孩子吃得开心,便创造了这种形似小鱼的面食。后来,这道小吃逐渐流传开来,成为了张掖的标志性美食。

 

Legend has it that Fish-like noodles originated from the ingenuity of a skilled Zhangye woman. In order to delight her children, she invented this pasta shaped like little fish. Over time, this snack gradually spread, becoming a hallmark delicacy of Zhangye.



 【文化寓意】

搓鱼子隐含着“如鱼得水”或“年年有余”的美好愿望。当搓鱼子下进锅里,拿筷子一搅,真就似一群摇头摆尾的小鱼在水里游动,这种生动的场景让人心生欢喜,也寄托了人们对美好生活的向往和期盼。

 

Fish-like noodles carries the good wishes of “being in one’s element” or “being surplus year after year”. When Fish-like noodles is added to the boiling pot and stirred with chopsticks, they truly resemble a group of little fish swaying their heads and tails as they swim in the water. This vivid scene brings joy to people’s hearts and also expresses their longing and aspiration for a better life.

搓鱼子以面粉为主要原料,富含碳水化合物和蛋白质。搭配各种蔬菜和肉类,营养均衡,口感丰富。这道小吃不仅美味,还具有很高的营养价值,深受食客喜爱。


Fish-like noodles uses flour as its main ingredient, which is rich in carbohydrates and proteins. When paired with various vegetables and meats, it provides a balanced nutrition and a rich flavor. This snack is not only delicious but also highly nutritious, making it deeply favored by people.

制作方法




【Cooking Methods】

 

材料准备:

(Preparing the Ingredients)


1、高筋面粉

High-gluten flour


2、适量凉水、盐

Adequate amount of cold water, salt


和面醒面:

(Kneading and Resting Dough)


1、面粉加盐,加凉水揉成光滑面团

Add salt to the flour and mix with cold water to form a smooth dough.


2、盖上湿布醒20分钟

Cover with a wet cloth and let it rest for 20 minutes.


擀皮切条:

(Rolling Out Dough and Cutting into Strips)


1、面团擀成5毫米厚片

Roll the dough into a 5mm thick sheet.

2、切成5毫米宽长条

Cut into 5mm wide strips.


搓制成型:

(Shaping the Dough)


1、长条稍搓成圆柱状

Slightly roll the strips into cylindrical shapes.


2、掐成寸段,双手搓成两头尖、中间粗的“鱼儿”状

Pinch them into inch-long segments and use both hands to shape them into “fish-like” forms with pointed ends and a thicker middle.


3、撒干面粉防粘

Sprinkle dry flour to prevent sticking.


煮制搓鱼:

(Cooking the Fish-like noodles)


1、开水下锅煮熟,时间略长

Boil in hot water until cooked (the cooking time may be slightly longer).


2、捞出可用凉水过或拌油防粘

Remove and either rinse with cold water or mix with oil to prevent sticking.


准备配菜:

(Preparing the Side Dishes)


青椒丝、洋葱丝、豆芽等(可根据喜好选择)

Shredded green peppers, shredded onions, bean sprouts, etc. (choose according to personal preference).


炒制调味:

(Stir-Frying and Seasoning)


1、热锅加油,炒熟配菜

Heat oil in a pan and stir-fry the side dishes until cooked.


2、加入搓鱼子,加酱油、香醋、辣椒油等调味

Add the Fish-like noodles, along with soy sauce, vinegar, chili oil, and other seasonings.


3、拌匀即可食用
