Olivier年轻时便开始了他的酒店业生涯。他在法国里昂的保罗·博古斯学院（Institut Paul Bocuse）主修酒店管理，并在毕业后加入丽思卡尔顿酒店公司，在那里磨练了他在餐厅和酒吧方面的领导技能。在迪拜负责几家餐厅和酒吧的开业期间，他展现出了卓越的管理和战略才能。此外，他还曾担任塞舌尔拉菲酒店和北京拉菲酒店的餐饮部总监，负责这两家酒店的成功开业。
