乡愁印记——舌尖 上 的 大 理

前言


大理是云南悠久文化的历史根脉、山川风貌的美丽缩影、对外开放的最佳窗口,是习近平总书记关心牵挂的地方,是一个记得住乡愁的地方。

承接着喜马拉雅的余脉,地处云贵高原与横断山脉结合部的大理,从西北向东南,打开了云岭山河的壮丽画卷,山高谷深,气势如虹。壮丽恢弘的地形地貌和立体气候,不仅养育了勤劳善良的各族儿女,形成了各具特色的民族风情,还为风格各异的传统饮食,提供了丰富多样的天然食材和千百年来形成的种植养殖食材,形成了独树一帜的地方美食,讲述着不同习俗中的乡愁故事。

体验一个地方的民俗,最直接的方法就是品尝地方小吃。家乡的味道就是乡愁的味道。唇齿之间,乡愁流连。大理的乡愁,让我们从大理的美食说起。

在大理,总有许多别致而地道的传统小吃和地方美食:譬如酸辣鱼、砂锅鱼、海稍鱼,譬如黄焖鸡、大块鸡、赶马鸡、木瓜鸡,譬如粑肉饵丝、喜洲粑粑、白族生皮、夹砂乳扇,譬如诺邓火腿、弥渡卷蹄、南涧锅巴油粉、洱源雕梅,还有鹤庆猪肝鲊、祥云酱辣子,譬如豆腐宴、土八碗、“三道茶”“三道菜”“三滴水”“三叠水”,譬如烧饵块、火烧猪、烤全羊,等等。

每一种美食的背后,或有着动人的故事,或有着耐人寻味的典故,人们在品尝美食的同时也在品味美食背后的文化。

在大理,总有一种乡愁在唇齿之间流连。这就是连着你、连着我、连着他的“乡愁印记”。希望它带着你找到舌尖上的至爱,找到心间的那缕乡愁。

Nostalgia Mark - Dali on the Tongue


Preface


Dali is the historical root of Yunnan's long culture, a beautiful microcosm of mountains and rivers, the best window for opening up to the outside world, and a place where General Secretary Xi Jinping cares about and is concerned about, a place that remembers nostalgia.


Bearing the remaining veins of the Himalayas, Dali, located in the combination of the Yunnan-Guizhou Plateau and the Hengduan Mountain Range, opens a magnificent picture scroll of the Yunling Mountains and Rivers from the northwest to the southeast, with high mountains and deep valleys, and the momentum is like a rainbow. Magnificent and magnificent topography and three-dimensional climate, not only nourished the hard-working and kind-hearted sons and daughters of various ethnic groups, and formed distinctive ethnic customs, but also for the different styles of traditional diets, providing a rich variety of natural ingredients and planting and breeding ingredients formed over thousands of years to form a unique local cuisine, telling the story of different customs.


The most direct way to experience the folklore of a place is to taste the local snacks.

In Dali, there are always a lot of chic and authentic traditional snacks and local cuisine: such as Hot and Sour Fish, Casserole Fish, Haishao Fish, Yellow Braised Chicken, Chunkuan Chicken, Horse Riding Chicken, Mugua Chicken, Stewed Pork Feet Rice Noodles, Xizhou Baba, Raw Pig skin, Milk Fan chess, Nuodeng Ham, Midu pig Hoof, Nanjian Pea Congee Eryuan carved plum, Heqing pickled pig intestines. Behind every kind of food, there is a touching story or an intriguing allusion, and people are savoring the culture behind the food while tasting it.


In Dali, there is always a kind of nostalgia flowing between the lips and teeth. This is the "nostalgia mark" that connects you, me, and him. I hope it will lead you to find the favorite on the tip of your tongue and the nostalgia in your heart.
