乳扇是云南白族等民族喜食的一种传统奶酪,乳扇和内蒙古的奶皮子有同工异曲之妙;有研究者认为,云南乳扇是忽必烈带领大大军南下时,部分留在云南的士兵,思念家乡的美食,尝试在云南制作的奶皮子,但是由于云南天气潮热,奶皮子做不成,于是他们就把奶皮子缠绕在竹竿上晾晒,做成了乳扇。这种传说有一定的可能性,但目前并没有确凿的历史证据来证实其完全正确。

Milk fan is a kind of traditional cheese that the Bai nationality in Yunnan Province likes to eat. Milk fan is similar to Inner Mongolia milk skin. Some researchers believe that when Kublai Khan led a large army to the south, some of the soldiers who stayed in Yunnan, missing the food in their hometown, tried to make milk skin in Yunnan, but because of the hot weather in Yunnan, milk skin could not be made, so they wrapped milk skin on a bamboo pole to dry and made milk fan. This legend has some possibility, but there is no hard historical evidence to prove that it is completely correct. In order to determine the true origin of the milk fan, it is necessary to rely on more historical documents, archaeological discoveries and in-depth research on the milk fan production process and other evidence to make a comprehensive judgment.
